used to go to a restaurant in a smallish town east of Nashville by about 70 miles called Cookeville. They served a trout dish that was to die for. The trout had been gutted and nothing else. When it came out on the plate in still had it's head and the eyeball was staring straight back at you as you ate. Cooked in some kind of lite sauce that didn't add to or take away from the fish...whoa...great eats. Sauger, trout, catfish, crappie, bass...my order of favorite fish to eat.
