The problem, as I see it,has a lot to do with unabated packer concentration and subsequent closings of smaller plants.They're simply trying to jam more animals thru fewer plants at faster and faster "chain" speeds and things are being overlooked.Also the inspection service budget has been cut. We didn't have all these food contamination problems years before packer concentration.And now some think it's ok to let JBS buy out 2 of our largest beef processors? WTF?!!! Time to wake up and realize what's happening!!!! But by all means handle the food with clean utensils and COOK IT THOROUGHLY! As a former beef producer with many ties in that industry that's my advice.
